Strawberry Galette

There is an organic strawberry farm in Nashville called The Green Door Gourmet. Every Wednesday night in the spring they invite the community to come and pick the sweetest organic strawberries. The strawberries steal the spotlight in this recipe. You will not find an easier, fail-proof dessert! Any berry combination will work and I relish a pear or apple version in the Winter. Strawberry Galette

  • 1 package French pie crust
  • 6 cups fresh berries (strawberries, blackberries, blueberries, raspberries, rhubarb))
  • 1 lemon (zest and juice)
  • 1/2 cup turbinado sugar
  • 2 Tbsp Flour
  • 1 egg for eggwash
  1. Preheat Oven to 425

  2. Mix berry assortment with 1 Tablespoon sugar, lemon zest and juice and flour. Stir and allow to sit. 

  3. Roll out into a circle the dough, spoon berries into center , leaving three odd inches to fold over the berries. 

  4.  Brush dough with egg wash and then sprinkle remaining sugar.

  5. Bake for 20 minutes until berries are bubbling. Take out and allow to sit for 15 minutes. Serve!
