Green Curry Soup

It arrives to the table, an aromatic emerald green broth in a large white pottery bowl, perfectly spiced and loaded with fresh herbs and a slice of lime. Recently, I decided to free-style my own version. Green curry is a signature Thai staple that has nutritional potency and fireworks of flavor. To lower the fat content of the soup, simply substitute with a lighter version of coconut milk. The soup’s star power comes from the handfuls of  fresh herbs (cilantro, basil and Italian parsley) tossed on the top at then end! I serve with either traditional rice noodles or sprouted brown rice! Green Curry Soup

  • 1 Large Onion or fat purple shallot diced
  • 2 tbsp olive or coconut oil
  • 1/2 tsp Kosher Salt
  • 2-3 tsp Thai Green Curry Paste (Depending on how spicy you want the broth)
  • 6 cups Vegetable or chicken bone broth
  • 1 can Coconut milk
  • 3 cups fresh baby spinach, chopped
  • 2 cups sliced mushrooms
  • 2 cups broccolini, or broccoli florets, trimmed
  • 1 tbsp fresh grated ginger
  • 1 garlic clove
  • 1 1/2 cup French green beans trimmed and cut into 1 inch pieces
  • 1 tbsp finely chopped lemongrass (optional)
  • 1 green onion finely sliced
  • 1 cup fresh cilantro, chopped
  • 1 cup fresh basil, chopped
  • Juice from one lime
  1. Heat olive oil, onions, and garlic clove, skin on in soup pot. Add salt and stir with a wooden spoon until onions are soft.

  2. Stir in green curry paste, stir mixture for a couple of minutes

  3. Add broth and coconut milk and bring to a simmer

  4. Add mushrooms, broccoli, and green beans (I like these to retain their green color and crunch. Don't overcook.)

  5. Turn off heat and add spinach, cilantro, basil, juice of one lime and salt to taste. Reserve a handful of cilantro and basil to garnish.

  6. You can add chicken to the pot, either from rotisserie chicken or poached chicken breasts in lemon, salt, and pepper

  7. In a separate pot, prepare either brown rice or rice noodles

Each bowl gets a ladle of brown rice or rice noodles, broth, and a garnish of green onion, cilantro and basil!
